Tricolor Dumplings are a vibrant and healthy dish made using a combination of wheat and ragi flour for the dough, filled with a colorful mix of carrots, spinach, and bell peppers. Ingredients:

For the Dumpling Dough:

  • 50 grams wheat flour
  • 50 grams ragi flour
  • 1/4 teaspoon salt
  • 1 teaspoon oil
  • Water (as needed)

For the Filling:

  • 50 grams grated carrots
  • 50 grams finely chopped spinach
  • 50 grams finely chopped bell peppers
  • 1 teaspoon oil
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt (to taste)

Procedure:

  • Mix wheat flour, ragi flour, and salt. Add oil and water to form a soft dough. Let it rest for 15 minutes.
  • Heat oil, add cumin seeds, and sauté grated carrots, spinach, and bell peppers. Add spices and cook until tender. Cool.’
  • Roll dough into circles. Place filling in the center, fold, and seal.
  • Steam for 10-15 minutes. Cook until golden brown, add water, cover, and cook until done. Enjoy hot with dipping sauce.
