THAI TURMERIC CHICKEN SALAD

Thai Turmeric Chicken Salad is a vibrant, refreshing dish that pairs tender turmeric-seasoned chicken with fresh vegetables and a zesty lime-ginger dressing. The salad is a perfect blend of flavors and textures, making it light yet satisfying.
For a Serving Size of Two:
Ingredients:
- 200 grams boneless, skinless chicken breast
 - 1 teaspoon turmeric powder
 - 1/2 teaspoon black pepper
 - 1/2 teaspoon garlic powder
 - 1 tablespoon olive oil
 - Salt to taste
 - 1 cup lettuce or mixed greens, chopped
 - 1/2 cup cucumber, sliced (about 50 grams)
 - 1/2 cup cherry tomatoes, halved (about 50 grams)
 - 1/4 cup shredded carrots (about 30 grams)
 - 1/4 cup red bell pepper, sliced (about 30 grams)
 - 1 tablespoon fresh cilantro, chopped
 - 1 tablespoon lime juice
 - 1/2 tablespoon fish sauce or soy sauce
 - 1/2 teaspoon honey (optional)
 - 1 clove garlic, minced
 - 1/2 teaspoon ginger, grated
 - 1/2 teaspoon chili flakes or fresh chopped chili (optional)
 
Procedure:
- Rub the chicken breast with turmeric powder, black pepper, garlic powder, and salt.
 - Heat olive oil in a skillet over medium heat. Cook the chicken for 5-7 minutes per side, until golden and fully cooked. Remove from heat and let rest for a few minutes before slicing.
 - In a large bowl, combine lettuce, cucumber, cherry tomatoes, carrots, bell pepper, and cilantro.
 - In a small bowl, whisk together lime juice, fish sauce or soy sauce, honey (if using), garlic, ginger, and chili flakes.
 - Add the sliced chicken to the salad bowl, drizzle with the dressing, and toss to coat.
 - Serve immediately and enjoy!
