Cinnamon Rubbed Salmon with Couscous & Yogurt

Cinnamon Rubbed Salmon with Couscous & Yogurt is a delicious fusion dish that brings together Middle Eastern-inspired spices and a creamy yogurt sauce. The warm cinnamon and cumin flavors pair beautifully with the richness of salmon, while the light, fluffy couscous complements the meal’s wholesome appeal. The minty yogurt-cucumber sauce adds a refreshing twist, making it an ideal meal for balanced nutrition and diverse flavors.
For a Serving Size of Two:
Ingredients:
- 200 grams salmon fillet
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1 teaspoon olive oil
- 120 grams couscous
- 1/2 teaspoon olive oil (for couscous)
- 200 ml water (for couscous)
- 1/4 teaspoon salt (for couscous)
- 100 grams plain Greek yogurt
- 1 tablespoon chopped mint
- 50 grams finely diced cucumber
- 1/2 teaspoon lemon zest
- 1 tablespoon lemon juice
- Fresh parsley or cilantro, for garnish
Procedure:
- Preheat the oven to 200°C (390°F). In a small bowl, mix the ground cinnamon, cumin, black pepper, and salt. Rub this spice mixture evenly over the salmon fillets.
- Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Sear the salmon for 1-2 minutes on each side until browned, then transfer to the oven and bake for 8-10 minutes, or until the salmon is cooked through and flakes easily.
- In a saucepan, bring 200 ml of water with 1/4 teaspoon salt to a boil. Remove from heat, add the couscous, and cover. Let it sit for 5 minutes, then fluff with a fork. Add 1/2 teaspoon olive oil and stir to coat.
- In a bowl, combine the Greek yogurt, diced cucumber, chopped mint, lemon zest, and lemon juice. Stir until smooth and well blended.
- On a plate, serve the couscous as a base, place the salmon fillet on top, and spoon the yogurt sauce over or beside it. Garnish with fresh parsley or cilantro.
