Spiced Nutty Sweet Potato

Spiced Nutty Sweet Potato is a delightful dish that brings together the natural sweetness of roasted sweet potatoes with a warm blend of spices and a crunchy nutty topping. For a Serving Size of Two:

Ingredients:

  • 200 grams peeled and cubed sweet potato
  • 1 teaspoon olive oil
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 20 grams chopped almonds
  • 20 grams chopped walnuts
  • 1 tablespoon fresh coriander

Procedure:

  • Preheat your oven to 200°C (400°F).
  • In a large bowl, toss the sweet potato cubes with olive oil, ground cinnamon, ground cumin, smoked paprika, black pepper, and salt until evenly coated.
  • Spread the seasoned sweet potato cubes in a single layer on a baking sheet.
  • Roast in the preheated oven for about 20-25 minutes, or until the sweet potatoes are tender and slightly crispy on the edges, turning halfway through.
  • In the last 5 minutes of roasting, sprinkle the chopped almonds and walnuts over the sweet potatoes. Return to the oven and roast until the nuts are lightly toasted.
  • Remove the sweet potatoes from the oven, and transfer them to a serving dish. Garnish with fresh coriander and serve warm.
