Kale and Chickpea Stir-Fry

Ingredients:
- 2 cups chopped kale
- 1 can chickpeas, drained and rinsed
- 1 medium carrot, julienned
- 1 small red bell pepper, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1/4 teaspoon red pepper flakes (optional)
- Sesame seeds for garnish
Instructions:
- Heat a tablespoon of sesame oil in a large skillet or wok over medium heat.
- Add minced garlic and sauté for a minute until fragrant.
- Add the julienned carrot and sliced red bell pepper to the skillet and stir-fry for 2-3 minutes until they soften.
- Add the chopped kale and drained chickpeas to the skillet. Stir-fry for another 3-4 minutes until the kale wilts and the chickpeas are heated through.
- Add soy sauce, rice vinegar, and red pepper flakes (optional). Pour the sauce over the stir-fry mixture and stir well to coat.
- Cook for another minute or two until everything is well combined and heated through.
- Garnish with sesame seeds.
- Serve the kale and chickpea stir-fry as a flavorful and nutritious dish.
