Kale and Chickpea Stir-Fry

Enjoy this wholesome and delicious Kale and Chickpea Stir-Fry as a quick and nutritious weeknight dinner option or a satisfying lunch. It’s a flavorful way to incorporate more greens and plant-based protein into your diet. Bon appétit!

Ingredients:

  • 2 cups chopped kale
  • 1 can chickpeas, drained and rinsed
  • 1 medium carrot, julienned
  • 1 small red bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • Sesame seeds for garnish

 

Instructions:

 

  1. Heat a tablespoon of sesame oil in a large skillet or wok over medium heat.
  2. Add minced garlic and sauté for a minute until fragrant.
  3. Add the julienned carrot and sliced red bell pepper to the skillet and stir-fry for 2-3 minutes until they soften.
  4. Add the chopped kale and drained chickpeas to the skillet. Stir-fry for another 3-4 minutes until the kale wilts and the chickpeas are heated through.
  5. Add soy sauce, rice vinegar, and red pepper flakes (optional). Pour the sauce over the stir-fry mixture and stir well to coat.
  6. Cook for another minute or two until everything is well combined and heated through.
  7. Garnish with sesame seeds.
  8. Serve the kale and chickpea stir-fry as a flavorful and nutritious dish.
