AVOCADO DEVILED EGG

A recipe that is definitely a keeper. Go give this one a try.
INGREDIENTS
- 1 egg, hard-boiled and peeled
- ¼ medium avocado, diced
- 1 small red onion, finely chopped
- 1 tsp sour cream
- 2 tsp freshly squeezed lemon juice
- Salt to taste
- Pepper to taste
- ½ tsp mixed herbs
METHOD
- Cut the egg in half lengthwise. For the nicest texture, make the filling in a small food processor; otherwise, mash by hand in a medium bowl with a fork or potato masher: To get the appropriate texture, combine or mash the yolk with the avocado, onions, sour cream, lemon juice, pepper, mixed herbs and salt. If necessary, add more salt after tasting.
- Scoop or pipe the prepared avocado mixture into the egg white halves. Serve immediately.
