Quinoa Super Seed Loaf

This Quinoa Super Seed Loaf is a nutritious, fiber-rich bread packed with a variety of seeds, including flaxseeds, sunflower seeds, pumpkin seeds, chia seeds, and sesame seeds. The addition of quinoa enhances the loaf with extra protein and a hearty texture, making it a satisfying and wholesome choice for breakfast or a snack. For a Serving Size of One Whole Loaf:
Ingredients:
- 100 grams quinoa
- 200 grams whole wheat flour
- 50 grams flaxseeds
- 30 grams sunflower seeds
- 30 grams pumpkin seeds
- 30 grams chia seeds
- 10 grams sesame seeds
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 tablespoons olive oil
- 1 cup water (adjust as needed for dough consistency)
- 1 teaspoon dried thyme
Procedure:
- Rinse the quinoa under cold water in a fine mesh strainer.
- In a saucepan, add the rinsed quinoa and 1 cup of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed. Allow the cooked quinoa to cool.
- Preheat your oven to 180°C (350°F).
- In a large bowl, combine the whole wheat flour, flaxseeds, sunflower seeds, pumpkin seeds, chia seeds, sesame seeds, salt, oil and baking powder. Mix well.
- Add the cooled quinoa to the dry ingredients and mix well. Pour in the wet ingredients and add enough water to form a dough. The dough should be thick but manageable. Add dried thyme and rosemary if desired.
- Grease a loaf pan or line it with parchment paper.
- Transfer the dough into the prepared loaf pan and press it down evenly. Bake in the preheated oven for 35-40 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy with your favorite spreads, toppings, or as part of a sandwich.
