Quinoa super seed loaf

Everybody likes a healthy sandwich filled with some creamy dressing and veggies. Here is the recipe for the nutty seed bread that apart from being nutritious has a very soft texture and wholesome taste.

Nutritional benefits: Quinoa is very nutritious and is full of antioxidants, fibre as well as protein. It helps in constipation, blood pressure and high cholesterol. Almond milk is low in calories and is a good source of vitamin D. Chia seeds are good in omega 3 fatty acids that helps in heart attack and stroke.

Ingredients:

  • 20ml almond milk
  • 5 grams quinoa flour
  • 5 grams buckwheat flour
  • 5 grams oats
  • 1 pinch of baking soda
  • 5grams pumpkin seeds
  • 5 grams almonds
  • 3 grams chia seeds
  • 3 grams flaxseeds
  • 3 grams sunflower seeds
  • ½ olive oil
  • 1 teaspoon of pink salt
  • 1 teaspoon thyme
  • 1 teaspoon rosemary

Method:

  • Take a bowl and add almonds, oats and pumpkin seeds. Blend them in a food processor to form smooth flour.
  • Take the bowl add the flour, remaining pumpkin seeds, chia seeds, baking soda, flaxseeds, buckwheat flour, quinoa flour, sunflower seeds, herbs and salt. Mix them well.
  • Prepare the batter by adding oat milk and let it sit for about 40-50 minutes to thicken up.
  • Preheat the oven at 180ºC.
  • Grease the baking tray with some olive oil and pour in the batter and let it bake for about 40-50 minutes.
  • Check it by pulling a knife through it and if that comes clean then it is done.
  • Season it with some seeds and enjoy in any form!
