Mini Sama Chawal Uttapam

Samak Chawal and Sago Uttapam is a delightful and nutritious dish perfect for a light breakfast or snack, especially during fasting periods. The combination of barnyard millet (Samak Chawal) and sago (Tapioca pearls) forms a smooth batter, enriched with low-fat curd and seasoned with green chilies, cumin seeds, and coriander leaves. These mini uttapams are cooked until golden brown and served hot with a side of low-fat yogurt or a healthy chutney, offering a wholesome and delicious meal. This meal makes a nice option during fasts and festivals too.

For a Serving Size of Two:

Ingredients:

  • 40 grams Samak Chawal (Barnyard Millet)
  • 20 grams Sago (Tapioca pearls)
  • 100 grams  boiled potato
  • 20 grams low-fat curd
  • 2-3 green chillies, finely chopped
  • 1 teaspoon cumin seeds powder
  • 3-4 fresh coriander leaves, chopped
  • 1 teaspoon olive oil (or any other oil like coconut or mustard oil)
  • Salt to taste

Procedure:

  • Rinse the Samak Chawal and sago thoroughly. Soak them separately in water for 2-3 hours.
  • Drain the soaked Samak Chawal and sago. Grind them together into a smooth batter using a little water if necessary.
  • Add the low-fat curd to the batter and mix well.
  • Grate or mash the boiled potato and add it to the batter.
  • Add finely chopped green chillies, cumin seeds powder, and salt to taste.
  • Mix everything thoroughly to form a smooth, thick batter. If the batter is too thick, add a little water to adjust the consistency.
  • Heat a non-stick pan or tawa and lightly grease it with a few drops of olive oil.
  • Pour a small ladleful of batter onto the pan to form mini uttapams.
  • Spread the batter slightly to form small, thick circles.
  • Cook on medium heat until the bottom is golden brown and the top is set. Drizzle a few drops of olive oil around the edges.
  • Flip the uttapams and cook the other side until it is also golden brown.
  • Repeat the process with the remaining batter.
  • Garnish the uttapams with chopped fresh coriander leaves. Serve hot with a side of low-fat yogurt or a healthy chutney.
