Ingredients:
- 4 slices of whole-grain bread
- 2 large eggs
- 150 ml milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1 teaspoon olive oil for cooking
- 1 large sliced banana
Procedure:
- In a shallow bowl, whisk together the eggs, milk, vanilla extract and ground cinnamon.
- Heat the olive oil or butter in a non-stick skillet over medium heat.
- Dip each slice of bread into the egg mixture, ensuring both sides are well-coated. Allow excess to drip off.
- Place the soaked bread slices in the hot skillet. Cook for 2-3 minutes on each side, or until golden brown and cooked through.
- Serve warm with fresh fruit.
