Egg Quinoa Burrito Bowl

For a Serving Size of Two:
Ingredients:
- 60 grams quinoa
- 2 large eggs
- 30 grams boiled kidney beans
- 30 grams boiled corn
- 20 grams halved cherry tomatoes
- 70 grams avocado diced
- 5 – 6 leaves shredded lettuce
- 2 tablespoon chopped coriander
- 1/2 tablespoon olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon lime juice
Procedure:
- Rinse the quinoa under cold water.
- In a saucepan, add water and bring it to a boil. Add the quinoa, reduce the heat to low, and cover the saucepan.
- Simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed.
- Fluff with a fork and set aside.
- In another pan , heat the olive oil over medium heat.
- Crack the eggs into the pan and scramble until fully cooked, about 2-3 minutes. Season with ground cumin, paprika, garlic powder, salt, and pepper.
- Remove from heat and set aside.
- In two bowls, divide the cooked quinoa evenly.
- Top each bowl with scrambled eggs.
- Add beans, corn, cherry tomatoes, diced avocado, and shredded lettuce.
- Sprinkle chopped coriander over the top.
- Drizzle lime juice over the bowls for added flavour.
