Almond and Rose Kheer

Almond Rose Kheer is a luxurious and aromatic dessert that beautifully blends the rich creaminess of almonds with the delicate fragrance of rose. The smooth almond paste creates a velvety texture, while the cardamom and saffron add depth and warmth. For a Serving Size of Two:

Ingredients:

  • 30 grams soaked and peeled almonds
  • 250 ml milk
  • 1 tablespoon rose water
  • 2-3 fresh rose petals
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron strands (optional, for colour)

Procedure:

  • Soak the almonds in water for a few hours or overnight. Peel off the skin and grind them into a smooth paste using a little milk.
  • In a saucepan, bring the milk to a gentle boil over medium heat.
  • Stir in the almond paste and continue to cook, stirring continuously to avoid lumps.
    Add the rose water, cardamom powder, and saffron strands to the mixture. Mix well.
  • If you prefer a slight natural sweetness, stir and cook for another 2-3 minutes.
    Let the kheer simmer on low heat for 5-7 minutes until it thickens to your desired consistency.
  • Pour the kheer into serving bowls, garnish with fresh rose petals, and serve warm or chilled.
