Spinach Pancakes

These Spinach Pancakes are a fun, vibrant green treat, perfect for kids! With the mild sweetness of banana and the nutritious boost from spinach, they make a delightful breakfast or snack.

For a Serving Size of Two:

Ingredients:

  • 50 grams spinach leaves
  • 50 grams whole wheat flour
  • 1 small mashed banana (about 60 grams)
  • 100 ml milk
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon cinnamon powder
  • 1 teaspoon olive oil
  • A pinch of salt

Procedure:

  1. Blanch the spinach in boiling water for 1-2 minutes, then drain and blend into a smooth puree.
  2. In a mixing bowl, combine the spinach puree, whole wheat flour, mashed banana, milk, baking powder, cinnamon, and salt. Mix until smooth and lump-free.
  3. Heat a non-stick pan over medium heat and lightly brush with olive oil. Pour a small ladle of batter onto the pan, spreading it to form a pancake. Cook for 2-3 minutes on each side or until golden.
  4. Serve warm with a drizzle of yogurt, fruit slices, or a sprinkle of seeds.
