For a Serving Size of Two:

Ingredients:

  • 30 grams whole wheat flour
  • 15 grams oat flour
  • 10 grams flaxseed meal
  • 8 grams sesame seeds
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon olive oil
  • 30 ml water (adjust as needed)
  • 1/2 teaspoon dried herbs (optional, e.g., rosemary or thyme)

Procedure:

  • Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
    In a large bowl, combine the whole wheat flour, oat flour, flaxseed meal, sesame seeds, baking powder, and salt. Mix well.
  • Add the olive oil and mix until the mixture resembles coarse crumbs.
    Gradually add water, a little at a time, until a dough forms. It should be smooth but not sticky.
  • Place the dough between two sheets of parchment paper. Roll it out to about 1/8-inch thickness.
  • Remove the top parchment paper and cut the dough into desired shapes using a knife or a cookie cutter.
  • Transfer the cut dough to the prepared baking sheet. If using, sprinkle the dried herbs over the top.
  • Bake in the preheated oven for 12-15 minutes, or until the crackers are golden brown and crisp.
  • Let the crackers cool completely on a wire rack before serving. Store in an airtight container to keep them crunchy.
