Poha Cutlets

Poha Cutlets are a delicious and nutritious snack made from poha (flattened rice) combined with mashed potatoes, spices, and herbs. The mixture is shaped into small cutlets and pan-fried until crispy and golden brown. These cutlets are a flavorful option for a tea-time snack, or a light meal. They are enhanced with a blend of spices and can be served with chutney or yogurt for extra flavor.

For a Serving Size of Two:

Ingredients:

  • 60 grams poha
  • 1 boiled and mashed medium-sized potato
  • 50 grams finely chopped onion
  • 1 finely chopped green chili
  • 2 tablespoons chopped coriander leaves
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons besan
  • 1 tablespoon oil for pan frying

Procedure:

  • Rinse poha in water and let it soak for about 10 minutes. Drain any excess water and lightly press to remove moisture.
  • Heat a little oil in a pan, add cumin seeds and mustard seeds, and let them splutter. Add finely chopped onion and green chili, and sauté until the onion becomes translucent.
  • Add turmeric powder, red chili powder, and garam masala. Stir for a minute until fragrant.
  • Add the soaked poha and mashed potato to the pan. Mix well to combine all ingredients. Cook for a few minutes, then turn off the heat and let the mixture cool.
  • Once cooled, add chopped coriander leaves and besan. Mix well until the mixture holds together.
  • Shape the mixture into small cutlets.
  • Heat oil in a pan over medium heat. Fry the cutlets until they are golden brown and crispy on both sides.
  • Serve hot with chutney or yogurt.
