Baked pumpkin slices with thyme

Baked Pumpkin slices is a delicious and attractive side dish for dinner or snacks. It can be served as a salad, in main course or side dish and serves all the purpose.

Nutritional Ingredients:- The main ingredient of this dish being pumpkin is good in beta carotene, Vitamin C which helps in immunity functions. This contains a good amount of antioxidants therefore protecting the cells against damage by free radicals. It is a nutrient dense, low calorie food. The other ingredient thyme is good source of Vitamin A and C which helps boosting immunity, helps in cough and has many more benefits.


20 grams pumpkin
10 grams bread crumbs
5 grams parsley, chopped fine
5 grams fresh thyme, chopped fine
1 fresh lemon zest
5 grams garlic, minced
A pinch of  salt
A pinch of white pepper
Oregano for seasoning
5 grams olive oil
10 grams plain yogurt

Fat: 5.9 Grams

Protein: 22.2 Grams

Carbohydrate: 10.1 Grams


Let the oven preheat for some time at 200 degree Celsius.
Cut the pumpkin into thin, single layer slices.
In a small bowl add bread crumbs, thyme, oregano, salt, pepper, lemon zest and garlic. Add them until they are well combined.
Sprinkle the pumpkin slices with olive oil and cover with the prepared mixture and layer them in the baking dish.
Let it bake for 20 minutes or until tender and then drizzle over the parsley.
Serve with yogurt and enjoy!
