For a Serving Size of Two:
Ingredients:
8 large lettuce leaves (Romaine or iceberg)
200 grams chicken breast or tofu, diced
1 small onion, finely chopped (50 grams)
1 carrot, julienned (50 grams)
1 small bell pepper, julienned (50 grams)
1 tbsp soy sauce (low sodium)
1 tbsp hoisin sauce (optional)
1 clove garlic, minced
1/2 tsp ginger, minced
1 tbsp olive oil or sesame oil
1 tsp rice vinegar
1/2 tsp chili flakes (optional for heat)
Salt and pepper to taste
Fresh cilantro for garnish
Procedure:
Heat oil in a skillet over medium heat. Add chopped onions, minced garlic, and ginger. Sauté for 2-3 minutes until softened.
Add the diced chicken or tofu to the pan and cook for 5-7 minutes until browned and cooked through. Add soy sauce, hoisin sauce (if using), rice vinegar, chili flakes, salt, and pepper. Stir well to coat everything.
Add the julienned carrots and bell peppers to the pan. Sauté for another 2-3 minutes until they are tender but still crisp.
Lay out the lettuce leaves and spoon the cooked filling into the center of each leaf.
Garnish with fresh cilantro and serve immediately, wrapping the lettuce around the filling to eat.
