Coconut Peanut Chutney

This Coconut Peanut Chutney is a creamy, nutty, and mildly spiced accompaniment that brings a rich flavor to any South Indian dish. It combines the sweetness of fresh coconut with the earthiness of peanuts, all topped with a fragrant tempering of mustard seeds and curry leaves.

For a Serving Size of Two:

Ingredients:

  • 50 grams fresh grated coconut
  • 20 grams roasted peanuts
  • 1 green chili, chopped
  • 1/2 teaspoon cumin seeds
  • 1 small clove garlic
  • 1/4 teaspoon salt
  • 10 grams chopped coriander leaves
  • 1/4 cup water
  • 1 teaspoon oil
  • 1/2 teaspoon mustard seeds
  • 4-5 curry leaves
  • A pinch of asafoetida

Procedure:

  • In a blender, combine the grated coconut, roasted peanuts, green chili, cumin seeds, garlic, salt, and coriander leaves. Add water gradually and blend until you achieve a smooth, thick paste. Adjust water for desired consistency.
  • In a small pan, heat oil over medium flame. Add mustard seeds, and once they start spluttering, add curry leaves and asafoetida. Sauté briefly.
  • Pour the tempering over the blended chutney and mix well. Serve fresh with idlis, dosas, or rice.

Nutritional Benefits:

  • Rich in healthy fats, fiber, and protein, this chutney provides lasting satiety and promotes digestive health. Coconut is known for its medium-chain triglycerides, which are quickly utilized for energy, while peanuts offer plant-based protein and essential minerals like magnesium and potassium.
  • The addition of cumin and asafoetida supports digestive health, and curry leaves bring a dose of antioxidants that can aid in reducing oxidative stress.
