Instant Pot Pulao

Instant Pot Pulao is a quick and easy one-pot dish that combines fragrant basmati rice with a colorful medley of vegetables. This versatile and flavorful meal can be enjoyed as a main dish or paired with yogurt or raita.

For a Serving Size of Two:

Ingredients:

  • 1 cup basmati rice, rinsed and soaked for 15 minutes
  • 1 small onion (about 50 grams), sliced
  • 1 small tomato (about 100 grams), chopped
  • 1/4 cup green peas (fresh or frozen)
  • 1/4 cup carrots, diced (about 30 grams)
  • 1-2 green chilies, slit
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon oil or ghee
  • Salt to taste
  • 1.5 cups water
  • Fresh coriander leaves for garnish

Procedure:

  • Set the Instant Pot to sauté mode and heat the oil or ghee. Add cumin seeds and let them splutter.
  • Add sliced onions and green chilies, sautéing until the onions are golden brown.
  • Stir in chopped tomatoes, turmeric powder, and salt, cooking until the tomatoes soften.
  • Add diced carrots and green peas, cooking for another 2-3 minutes.
  • Add the soaked and drained basmati rice, gently stirring to combine with the vegetables.
  • Pour in the water and sprinkle garam masala on top. Stir gently to combine.
  • Close the lid of the Instant Pot, set the valve to sealing, and cook on high pressure for 6 minutes.
  • Once the cooking is complete, let the pressure release naturally for 5 minutes, then perform a quick release.
  • Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
