Lemon Brown Rice with Garlic & Thyme

Ingredients:

  • 1 cup brown rice (about 185 grams)
  • 2 cups water or vegetable broth (about 480 ml)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Zest and juice of 1 lemon
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt to taste

Procedure:

  • Rinse the brown rice under cold water until the water runs clear. In a pot, combine the rice and water or vegetable broth, bringing it to a boil.
