Smoky black bean vegan soup

Ingredients:

  • 20 grams carrots, chopped
  • 15 grams black beans
  • 10 grams fresh boiled corn
  • 20 grams onion, finely chopped
  • 20 grams tomato
  • 1-2 stalks celery, slices
  • 1-2 cloves garlic, crushed
  • ½ teaspoon ground cumin
  • 1 cup vegetable stock
  • 1 teaspoon oil
  • Salt to taste
  • 1-2 springs Coriander, for serving

Method:

  • In a frying pan, heat oil on medium-high flame. Add carrots, celery and onions. Cook until the colour changes to brown, while stirring occasionally.
  • Add vegetable broth, tomato, garlic and cumin and bring it to boil.
  • Add black beans and corn and cook until tender.
  • Once done, garnish it with coriander and serve hot.
