CUCUMBER SALAD

Salad is combination of some vegetables and fruits with some favourite seasonings. The combined vegetables may be raw or cooked as per the taste loved by the people.

NUTRITIONAL BENEFITS
Cucumber is highly beneficial and high in nutrients. It contains anti-oxidants . It also promotes hydration and is potassium rich. Cucumbers are not just for summers, but help in winter dehydration as well.

INGREDIENTS
2 cucumbers
Half cup onion (sliced)
One fourth cup Yogurt
1 tbsp toasted amaranth seeds
1 tsp lemon juice
2 tbsp Coriander leaves
Salt and pepper to taste

INSTRUCTIONS:
In a bowl, combine cucumbers and onion
In another bowl, combine yogurt, lemon juice and beat it until smooth.
Season with salt and pepper.
Dressing is ready
Pour dressing over cucumbers and onions and garnish with coriander leaves and toasted amaranth seeds.
And serve it.
