Pea Shakshuka

Pea Shakshuka is a vibrant and healthy twist on the classic Middle Eastern dish, featuring a flavorful tomato sauce filled with peas and spices, topped with perfectly poached eggs. Ingredients:

  • 200 grams frozen or fresh peas
  • 100 grams onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 200 grams canned diced tomatoes (or fresh tomatoes, chopped)
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp red chili flakes (optional)
  • 4 eggs
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro or parsley for garnish

Procedure:

  1. Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Sauté until softened, about 5-7 minutes. Add garlic and cook for an additional minute.
  2. Add the Tomatoes and Spices: Stir in the canned diced tomatoes, ground cumin, paprika, and red chili flakes. Season with salt and pepper. Simmer for 5-7 minutes until the mixture thickens slightly.
  3. Incorporate the Peas: Add the peas to the skillet and stir to combine. Create small wells in the mixture for the eggs.
  4. Add the Eggs: Crack an egg into each well and cover the skillet. Cook until the eggs are set to your liking, about 5-7 minutes for runny yolks.
  5. Garnish and Serve: Remove from heat, garnish with fresh cilantro or parsley, and serve hot with crusty bread or pita.
