Avocado Sesame Chicken Sandwich

For a Serving Size of Two:

Ingredients:

  • 80 grams (4 slices) sourdough bread or multigrain bread
  • 100 grams boiled boneless, skinless chicken breast (shredded)
  • 100 grams avocado 
  •  2-3 chopped green chillies
  • 1 tablespoon minced garlic
  • 70 grams grams chopped tomato
  • 70 grams grams chopped onions
  • 3- 4 lettuce leaves
  • 1 teaspoon ginger garlic paste
  • ½ teaspoon turmeric powder
  • ½ teaspoon chilli powder
  • ½ teaspoon cumin powder
  • 1 teaspoon roasted sesame seeds (white)
  • 1 teaspoon mustard paste
  • 1 tablespoon lemon juice
  • Salt & pepper to taste
  • 1.5 teaspoon olive oil

Procedure:

  1. In a saucepan heat oil, add onions and saute till translucent then add ginger and garlic paste and saute for 5- 10 mins. 
  2. Add salt, turmeric, chilli and cumin powder and saute till spices are well cooked, then add  shredded chicken, ½ tbsp lemon juice, mustard paste, pepper and cook for 3-5 mins.
  3. In a bowl add sliced avocado, lemon juice, chopped green chillies, minced garlic salt and pepper and mash it with a fork until smooth. 
  4. Cover and let it sit for 3-4 mins, after that add roasted sesame seeds and mix everything well.
  5. Toast the bread. Spread avocado on one piece of toast after mashing it with a fork. Add  prepared chicken filling, tomato slices, letuce leaves, and a second piece of toast to the top.
  6. Serve immediately.
