Garlicky Chicken Vegetable Skillet is a wholesome one-pan meal combining tender chicken with a variety of colorful vegetables. This dish is packed with flavor from garlic, paprika, and herbs while offering a quick and healthy meal option. It’s perfect for busy days when you need something nutritious and satisfying in a short amount of time.

For a Serving Size of Two:

Ingredients:

  • 200 grams boneless chicken breast, cut into strips
  • 50 grams finely chopped onion
  • 50 grams sliced bell peppers (red, yellow, green)
  • 50 grams sliced zucchini,
  • 50 grams sliced carrots
  • 30 grams spinach leaves
  • 2 teaspoons garlic, minced
  • 2 teaspoons olive oil
  • 1/2 teaspoons black pepper (1/2 teaspoon)
  • 1/2 teaspoons paprika (1/2 teaspoon)
  • 1/2 teaspoons dried oregano (1/4 teaspoon)
  • Salt to taste
  • 1 teaspoon fresh parsley, chopped

Procedure:

  • Heat 1 teaspoon of olive oil in a skillet over medium heat. Add the chicken strips, season with salt, pepper, and paprika, and cook for about 5-7 minutes until browned and fully cooked. Set aside.
  • In the same skillet, heat the remaining teaspoon of olive oil. Add garlic and onions, sauté until fragrant. Then, add bell peppers, carrots, and zucchini, cooking for 4-5 minutes until slightly tender.
  • Stir in spinach and cook for another 1-2 minutes until wilted. Add the cooked chicken back into the skillet and toss everything together. Season with dried oregano and adjust salt if needed.
  • Garnish with freshly chopped parsley and serve hot.
