Roasted Cauliflower with Drizzled Pine Nuts

Roasted Cauliflower with Drizzled Pine Nuts is a delightful and nutritious dish featuring tender, golden-brown cauliflower florets seasoned with cumin and smoked paprika. The cauliflower is roasted to perfection and then topped with toasted pine nuts for added crunch and a rich, nutty flavor. For a Serving Size of Two:

Ingredients:

  • 300 grams cauliflower, cut into florets
  • 2 teaspoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 30 grams pine nuts
  • 1 tablespoon lemon juice
  • Fresh parsley or cilantro for garnish (optional)

Procedure:

  • Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  • In a large bowl, toss the cauliflower florets with olive oil, ground cumin, smoked paprika, salt, and black pepper until evenly coated.
  • Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until the cauliflower is golden brown and tender, tossing halfway through for even roasting.
  • While the cauliflower is roasting, heat a small skillet over medium heat. Add the pine nuts and toast, stirring frequently, until they are golden brown and fragrant, about 3-4 minutes. Remove from heat and set aside.
  • Once the cauliflower is done, remove it from the oven and drizzle with lemon juice. Sprinkle the toasted pine nuts over the roasted cauliflower.
  • Garnish with fresh parsley or cilantro if desired. Serve warm.
