Ingredients:

  • 60 makhana (fox nuts), lightly roasted
  • 100 grams finely chopped onion
  • 100 grams finely chopped tomato
  • 1 tablespoon ginger-garlic paste
  • 1-2 green chilies, slit
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 2 teaspoons ghee
  • Salt, to taste
  • Fresh coriander leaves for garnishing

Procedure:

  • In a pan, heat the oil over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add the finely chopped onions and sauté until they turn golden brown.
  • Add ginger-garlic paste and slit green chilies. Sauté for a minute until fragrant.
  • Add the chopped tomatoes and cook until they soften. Add turmeric powder, coriander powder, and salt. Cook for an additional 2-3 minutes until the spices are well incorporated.
  • Gently stir in the roasted makhana and garam masala. Mix well to coat the makhana with the spice mixture. Cook for about 5-7 minutes, stirring occasionally, until the makhana is heated through and slightly crisp.
  • Adjust the seasoning as needed. Remove from heat.
  • Garnish with fresh coriander leaves and serve hot.
