Sweet Corn and Paneer Salad

This Sweet Corn and Paneer Salad is a delightful combination of flavors and textures. The natural sweetness of the corn pairs beautifully with the creamy paneer, while the fresh cucumber and red bell pepper add a crunchy contrast. For a Serving Size of Two:

Ingredients:

  • 200 grams boiled sweet corn kernels
  • 100 grams paneer (cubed and lightly toasted)
  • 80 grams diced cucumber
  • 50 grams diced red bell pepper
  • 30 grams chopped coriander leaves
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon roasted cumin powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Procedure:

  • Boil the sweet corn kernels and lightly toast the paneer cubes in a pan until they are golden on the outside. Dice the cucumber and red bell pepper.
  • In a small bowl, mix olive oil, lemon juice, roasted cumin powder, black pepper and salt. Whisk the dressing until smooth.
  • In a large bowl, combine the boiled sweet corn, toasted paneer, diced cucumber, red bell pepper, and chopped coriander leaves.
  • Pour the dressing over the salad and gently toss to coat all the ingredients evenly.
  • Divide into two portions and serve immediately. You can also chill it in the refrigerator for 15 minutes if preferred.
