Sprouted methi salad

Fenugreek is a known super food. It has been extensively researched for its use in lowering blood sugar and also in helping to relieve constipation. 

 

This recipe is a unique one which combines different flavors and elements along with fenugreek to give a wonderful salad which is most beneficial to a diabetic at the same time giving maximum nutritional benefits to anyone who consumes it.

 

Nutritional benefits: Sprouting has shown to improve the nutritional profile of fenugreek seeds and decrease the fiber content such that it gets digested and absorbed in the system more easily. Also, germinated fenugreek seeds have higher antioxidant content and enhanced antidiabetic effect than its boiled counterpart.

 

Ingredients:

  • ¼ cup Methi/Fenugreek Seeds Sprouts
  • ¼ cup Mung Beans/Green Gram Sprouts
  • 1 Cucumber peeled and diced
  • 1 Carrot grated
  • ¼ cup pineapple, chopped
  • ¼ cup grated raw mango
  • 1 tablespoon Onion chopped
  • 2 tablespoons Tomato chopped
  • ¼ teaspoon crushed black pepper
  • 2 teaspoon lime juice
  • 1 tablespoon coriander leaves
  • salt to taste

Method:

  • For sprouting methi and moong, soak them separately overnight, drain the water in the morning and cover them with a damp cloth and keep aside till small sprouts come out.
  • In a medium bowl, Add all the ingredients of the salad and squeeze the lemon, add salt, black pepper, chopped coriander  and toss well until all the ingredients are mixed and well seasoned.
  • Allow it to sit in the refrigerator for 30 minutes or so before serving
