Lychee and Mint Salad with Yogurt Dressing

Ingredients:
- 1 cup lychee, peeled and deseeded
- 1 cucumber, diced
- 1 small red onion, thinly sliced
- 1 small carrot, grated
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup roasted peanuts, crushed
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
- 1 tablespoon honey
- Salt to taste
Instructions:
- In a large mixing bowl, combine lychee, cucumber, red onion, carrot, and mint leaves.
- In a separate bowl, whisk together yogurt, lemon juice, honey, and salt until well combined.
- Pour the yogurt dressing over the lychee mixture and gently toss to coat all the ingredients.
