Ingredients:

  • 1 cup (150 grams) cooked chickpeas (canned or boiled)
  • 2 tablespoons tamarind paste (adjust to taste)
  • 1 tablespoon olive oil
  • 1 medium onion (about 100 grams), finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 green chili, finely chopped (adjust to spice preference)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder (optional, for heat)
  • Salt to taste
  • 1/4 cup (60 ml) water (as needed)
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (for serving)

Procedure:

  • In a pan, heat the olive oil over medium heat. Add the cumin seeds and let them splutter.
  • Add the chopped onion and sauté until translucent and golden brown, about 5-7 minutes.
  • Stir in the minced garlic, grated ginger, and green chili, cooking for an additional minute until fragrant.
  • Sprinkle in the coriander powder, turmeric powder, red chili powder (if using), and salt. Stir well to combine and cook for another minute.
  • Add the cooked chickpeas to the pan, mixing them with the spices and aromatics.
  • Pour in the tamarind paste and add water as needed to create a desired consistency. Stir to coat the chickpeas evenly.
  • Let the mixture simmer for about 5-10 minutes, allowing the flavors to meld together. Adjust the consistency by adding more water if necessary.
  • Once cooked, taste and adjust seasoning if needed. Remove from heat and garnish with fresh cilantro.
  • Serve hot with lemon wedges on the side, which adds a refreshing zing to the dish.
