Almond Flour Waffles

For a Serving Size of Two:
Ingredients:
- 100 grams almond flour
- 2 large eggs
- 60 ml milk
- 2 teaspoon melted coconut oil
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- A pinch of salt
- 1/4 teaspoon cinnamon
Procedure:
- In a mixing bowl, whisk together the almond flour, baking soda, and salt. In another bowl, whisk the eggs until frothy, then add the milk, melted coconut oil, cinnamon powder and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until you get a smooth batter. The batter should be thick but pourable.
- Preheat your waffle maker. Lightly grease the waffle maker with a little coconut oil if necessary.
- Pour half of the batter onto the waffle iron, spreading it evenly. Close the lid and cook for 3-5 minutes or until the waffles are golden brown and cooked through.
Repeat with the remaining batter. - Serve the almond flour waffles warm with your choice of toppings like fresh berries, nuts, or a drizzle of almond butter.
