Cabbage Cups

Cabbage cups are an amazing and relishing salad with the goodness of lots and lots of vegetables.

Nutritional Benefits:

Carrot is a rich source of Vitamin A and fiber. Its consumption is linked to improved vision and decreased cholesterol levels. Bell peppers are rich in vitamin A, vitamin C and potassium. They also are a fair source of fiber, folate and iron.

Ingredients:

  • 20 grams cabbage
  • 10 grams pasta
  • 20 grams cucumber
  • 20 grams carrots
  • 20 grams bell peppers
  • 20 grams onion
  • ¼ teaspoon vinegar
  • ¼ teaspoon thyme
  • ¼ teaspoon oregano
  • ¼ teaspoon chilli flakes
  • 5 grams olive oil

Method:

  • Preheat the oven to 400-degree F. Place the chopped vegetables on the baking sheet and drizzle with olive oil.
  • Allow to bake for 20 -30 minutes until vegetables turn golden brown.
  • In a hot pan boil pasta until it becomes soft.
  • Take out the roasted vegetables and pasta and toss them with a mixture of vinegar, oregano, chili flakes, and thyme.
  • Now place 2 cabbage leaves and stuff them with the prepared mixture.
  • Serve and enjoy
