Mango Popsicle

These Mango Popsicles are a delightful summer treat, bursting with the tropical flavor of ripe mangoes and the hydrating goodness of coconut water. Simple and natural, they are perfect for cooling down on a hot day while satisfying your sweet tooth without added sugars.

For a Serving Size of Two:

Ingredients:

  • 200 grams ripe mango, peeled and chopped
  • 150 ml coconut water
  • 1 tablespoon lemon juice
  • 1 tablespoon chia seeds
  • A pinch of salt

Procedure:

  1. In a blender, combine the chopped mango, coconut water, lemon juice, and a pinch of salt. Blend until smooth.
  2. Stir in the chia seeds to the mango mixture, allowing them to distribute evenly.
  3. Pour the mango mixture into popsicle molds, leaving a little space at the top for expansion.
  4. If your molds have a cover, place it on. Otherwise, insert popsicle sticks into the molds.
  5. Freeze the molds for at least 4-6 hours or until completely solid.
  6. To unmold, run warm water over the outside of the molds for a few seconds, then gently pull the popsicles out. Enjoy your refreshing mango popsicles!
