Spinach Sauce Pasta

Spinach Sauce Pasta is a vibrant and nutritious dish that combines the wholesome goodness of spinach with whole wheat pasta. The creamy spinach sauce is packed with flavor and offers a healthful twist on traditional pasta dishes, making it perfect for a quick and easy weeknight dinner.

For a Serving Size of Two:

Ingredients:

  • 60 grams whole wheat pasta
  • 100 grams fresh spinach leaves
  • 2 teaspoon olive oil
  • 100 grams finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 tablespoons crumbled feta cheese
  • 100 ml vegetable broth or water
  • Fresh basil leaves for garnish

Procedure:

  • Bring a pot of salted water to a boil. Add whole wheat pasta and cook  until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
  • In a pan, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Add the fresh spinach leaves to the pan. Cook until the spinach is wilted, about 3-4 minutes. If using nutmeg, add it at this stage along with salt and pepper to taste.
  • Remove the pan from heat and let it cool slightly. Transfer the spinach mixture to a blender or food processor. Add 100 ml of vegetable broth (or water) and blend until smooth. Adjust the seasoning if needed.
  • In the same pan used for the spinach, combine the cooked pasta and spinach sauce. Stir well, adding reserved pasta water a little at a time until you reach your desired consistency.
  • Plate the pasta and top with  cheese and fresh basil leaves for garnish.
