Lemon Herb Rice Salad

Ingredients

  • ¼ Cup Rice
  • ½ Lemon
  • ½ Small Onion, thinly sliced
  • ½ medium carrot, shredded
  • 2 Tsp. Oil
  • 1 Tbsp. Rice Wine Vinegar
  • ½ Cucumber Seeded and Diced
  • 2 Tbsp. Peanuts
  • Some Cilantro and Basil Leaves to garnish

Method

  • Take the lemon and remove the wide strip zest from lemon.
  • Keep rice for cooking and add lemon zest to it. After rice is cooked transfer the rice to the large bowl and discard the zest.
  • In a pan, heat some oil add lemon zest and keep on the low flame for 5 minutes.
  • For dressing in a bowl, add lemon juice 1-2 Tsp., Rice Vinegar 1 Tbsp., salt, black pepper and lemon oil 2 Tsp. after discarding lemon zest.
  • Now take a bowl, add onion, carrot, cucumber, and rice. Garnish it with Cilantro and Basil leaves and drizzle the dressing.
