Vegan Coconut Ladoo

Most of us love desserts but are worried about them being unhealthy, throwing our diet off balance. There are some who are off lactose, but still have sweet cravings. This is a nutrition-packed healthy recipe that is also vegan.
Ingredients:
- 1 cup desiccated coconut
- 1/2 cup almond flour (ground almonds)
- 1/2 cup jaggery powder or powdered sugar
- 1/4 cup coconut milk
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)
- Chopped nuts for garnish (e.g., almonds, pistachios)
Instructions:
- In a pan, dry roast the desiccated coconut over low heat until it turns lightly golden. Remove from heat and let it cool.
- In a mixing bowl, combine the roasted coconut, almond flour, jaggery powder (or powdered sugar), cardamom powder, and saffron strands (if using).
- Gradually add coconut milk to the mixture, a little at a time, and mix well until the mixture comes together. It should be slightly sticky and moldable.
- Roll small portions of the mixture between your palms to form small round balls (laddoos). If the mixture feels dry and crumbly, add more coconut milk to bind it together.
- Garnish each ladoo with chopped nuts of your choice and gently press them into the surface.
- Place the coconut ladoos in an airtight container and refrigerate for at least 1 hour to set.
- Serve the vegan coconut ladoos chilled as a delightful and healthier Indian dessert.
