Broccoli Almond Salad

Almond & broccoli salad is an amazing recipe made with the goodness of almonds and fresh broccoli florets. This super healthy and delicious salad could be enjoyed during evening supper or at any point of time during the day.

Nutritional Benefits:
Broccoli is a low calorie which is high in fibre and thus can aid proper digestion. Essential vitamins and minerals like B vitamins, folate, vitamin c is also present in them. Almonds are good source of dietary fibre which helps in weight loss and further reduces the risk of diabetes and cardiovascular diseases.

Ingredients:

  • 40 grams broccoli
  • 5 grams almonds
  • 20 grams green onions
  • 1 teaspoon olive oil
  • 1 teaspoon vinegar
  • 1-2 garlic cloves
  • 10 grams cranberries
  • ½ teaspoon mustard oil
  • 1 teaspoon smoked paprika
  • Salt and pepper as per taste

Method:

  • Firstly, preheat the oven to 350-degree F.
  • Whisk together vinegar, cloves, olive oil, mustard oil, and garlic.
  • Place the almonds and broccoli florets and sprinkle smoked paprika on them. Then place them inside the oven for 8-10 minutes till they turn golden in colour.
  • Remove them from the oven and let it cool.
  • Now take a deep bowl and add the baked almonds and walnuts followed by prepared dressing. Add salt and pepper and mix well.
  • Serve.
