Rediscovering The Taste Of Madhya Pradesh

The second largest state of India- Madhya Pradesh, its culinary tradition is also largely influenced by the cuisines of all the Border States i.e. Uttar Pradesh, Maharashtra, Gujarat and Rajasthan. The result is an extensive mix of contrasting tastes and flavors that does not disappoint anyone having it.

A Foodie’s Paradise

Madhya Pradesh is a foodie’s paradise when it comes to traditional cooking which is rich and comprises of both vegetarian and non-vegetarian dishes eaten and relished by all. The food culture of Madhya Pradesh is as varied as its people, its history and its culture.

While the northern and western parts of the state focus on meat and wheat, the southern and eastern parts of the state have rice and fish as a staple diet. The state also has a strong Muslim influence, and so it offers the abundance of non-vegetarian food as well. Visitors can enjoy the flavor-packed dishes such as biryani, korma, keema, kebabs and much more.

Agriculture in Madhya Pradesh

Agriculture is the lifeline of Madhya Pradesh and most of its population depends upon agro related activities for the livelihood. Because of its diverse climatic and soil conditions, this state is the largest producer of soya bean and wheat. The state also leads in the production of gram, mustard, sunflower, green pea, and coriander. And because of its outstanding performance in agriculture production, Madhya Pradesh has also received a best state award.

Health benefits of soya beans come from dietary fiber, vitamin K, B6, C, riboflavin, thiamin including iron, magnesium, potassium, phosphorous, zinc, selenium, manganese and copper serving wealth benefits like improved metabolism, healthy weight gain, defend cholesterol, aids in digestion and promote bone health.

Madhya Pradesh offers some lip-smacking delicacies and the ones that are on the top list for food lovers. Some of them are shared below. Have a look!

  • Poha: Any visit to the heart of India is incomplete without gorging on a plate of poha along with jalebi. It is the best breakfast dish and can never be replaced.This mildly spiced dish is made with flattened rice flakes, onions, potatoes and peanuts making it a good source of carbohydrates and lowers down blood sugar levels. Also, poha is easy to digest and perfect for people with diabetes.
  • Bhutte Ka Kees: This Indian styled cream corn recipe is prepared with corn kernels cooked with milk and spices. This delicious, easy and quick street food from Indore is best for tea time break and also a good source of dietary fiber, vitamins, and antioxidants in addition to minerals in moderate proportions.
  • Gajak: One of the great pleasures of wandering around the mohallas near Gwalior Fort is an irresistible scent of freshly made gajak which is a dry sweet. While walking around the streets, you might see groups of people in a courtyard, roasting sesame seeds in huge pots and jaggery, making it rich in iron, calcium, zinc and phosphorus. It is then beaten into thin slabs to be cut up and packed as gajak.
  • Bafla: This recipe is influenced by Rajasthan’s dal baati dish. In bafla recipe wheat rolls are softer, as it is boiled before being baked. Hot baflas, are then dipped in ghee (clarified butter), and served with spicy cooked lentils, or dal making it a complete meal rich in protein and carbs.
  • Malpua: These are India’s own pancakes majorly prepared with flour, fried in ghee and then dipped in the sugar syrup for added taste, making you crave for the dish again and again. The garnish of saffron which is in rich in vitamin A, folic acid, and niacin further enhances the taste of the recipe. It is best served with rabdi for a complete treat.
  • Bhopali Pan: A visit to this state is again incomplete if you miss out on Bhopali paan. This mildly strong betel-leaf preparation, which is full of vitamin C, thiamine and niacin is then sweetened with sugared rose petals, is eaten at the end of a meal. It’s considered good to eat after a meal because it reduces gastric pain, eases constipation and also improve oral health.
