If you’re looking for the perfect blend of protein, iron, and wholesome nutrients, while not compromising on taste, then this zesty, light and flavor filled Corn & Avocado salad will become your go-to meal.
What do you need?
- 30g steamed corns
- 2 cups of halved tomatoes
- 1/2 cup of sliced red onion
- 1 large avocado, cut into 1/2-in cubes
- 1/3 cup chopped fresh basil leaves
- 2 tablespoons of vinegar
- 1/4 cup olive oil
- 1/4 teaspoon of kosher salt
- 1/4 teaspoon of freshly ground black pepper
Avocados are loaded with fiber, and contain more potassium than bananas. Besides this, Avocados help in lowering cholesterol, and Triglyceride Levels.
Course: Lunch or Dinner
In a large pot of boiling salted water, cook the corn for 3 minutes until the starch has gone. Drain and immerse the corn in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob, and place them in a large bowl.
Toss the avocados with lemon juice and add them to the bowl with the corn. Add the tomatoes, red peppers, onion, jalapeno peppers and lime zest to the bowl.
Whisk the lime juice, olive oil, 2 teaspoons kosher salt, black pepper, garlic, and cayenne pepper in a small bowl and pour over the vegetables. Toss well. Keep refrigerated until ready to serve.
