Mexican Style Fruit Salsa

Pineapples are the delicious tropical fruits and a storehouse of numerous health benefits due to its amazing nutrients. Nutrients such as bromelain, protein, carbohydrates and dietary fiber, vitamin A, B5, B6, C, beta-carotene, thiamin, and folate including potassium, manganese, copper, calcium, sodium and magnesium. At last they are low in calories therefore, a major fruit of weight loss diet.

Tomatoes are the major food source for antioxidants, typically for lycopene, that has been associated with countless health benefits. Also, they are the great source of vitamin C, K, potassium and folate.

Ingredients:

  • Pomegranate seeds- 30g
  • Chopped pineapple- 30g
  • Chopped tomato- 25g
  • Fresh lime juice- 10ml
  • Grated lime zest- 2 teaspoon
  • Fresh mint- 3-4
  • Chopped parsley leaf- 3-4
  • Salt to taste
  • Ground white pepper to taste
  • Olive oil (for dressing)- 1 teaspoon

Calories– 87kcal
Protein– 0.8g
Carbohydrate– 10.4g
Fat– 4.5g

Method:

  • Take a medium size bowl, toss in together- pomegranate, pineapple, tomatoes, lime juice, lime zest, mint leaves, parsley and olive oil. Season it with salt and white pepper.
  • Cover the bowl and chill in the refrigerator for at least 2 hours before serving.

Nutritional Benefits

Beetroot provides you with fibre, iron, potassium, folate and Vitamin C which is good for skin and further act as an antioxidant. It can improve exercise performance, lower blood pressure and serve as a low calorie food. It can also improve digestion and help in weight management. Thyme is a Mediterranean herb and has been traditionally used to cure diarrhoea, stomach ache and sore throat.

Ingredients

2 small beets

Few sprigs of thyme

1 teaspoon olive oil

1 teaspoon lemon zest

Salt- as per taste

Calorie = 112 kcal
Protein = 2.8 grams
Carbohydrates = 14.8 grams
Fat = 4.7 grams
Recommended for- High Blood Pressure and Digestion
Course- Evening Snack

Method

Cut beets into thin slices

Put them in a saucepan, with some water. Boil until tender

Next, light your charcoal or barbecue fire

Take a large piece of foil and lay the beets in them. Brush a little olive oil and top with thyme and lemon zest.

Fold the foil and twist the ends together. Punch small holes in the foil with the help of a knife or fork.

Leave it to cook for 15-20 minutes.

Once cooked, allow it to cool and then discard the charred skin.

Toss with salt and pepper, and serve.
