GHUGNI

 This lip-smacking bengali dish is rich in good quality protein and fibre. Thus, works best for diabetics, for those who want to lose weight,and heart patients. This can be had as a snack with tea in the evening. Let’s see its preparation.

  

Ingredients:

  1. 1 ½ cups finely chopped fenugreek(methi) leaves
  2. 1 cup soaked & boiled dried white peas
  3. 1 tsp oil
  4. ½ tsp cumin seeds(jeera)
  5. 1 bayleaf(tejpatta)
  6. ½ cup finely chopped onions
  7. ¼ tsp grated ginger
  8. ¼ tsp grated garlic
  9. ½ cup finely chopped tomatoes
  10. ½ tsp turmeric powder
  11. 1 tsp chilli powder
  12. ½ tsp cumin seeds powder
  13. ½ tsp garam masala
  14. Salt to taste
  15. 1 tbsp finely chopped coriander leaves (dhania)



Method:

  1. Soak white peas in enough water for 8 hours.
  2. Drain well, add 2 ½  cups of water and pressure cook for 3-4 whistles.

Allow the steam to escape before opening the lid.

  1. Heat the oil in a deep non-stick pan. To this add the cumin seeds & bayleaf and saute on a medium flame for 30 seconds.
  2. Add the onions,ginger and garlic and saute on a medium flame for 2-3 minutes.
  3. Add the fenugreek leaves and saute them on a medium flame for 2-3 minutes.
  4. Add the tomatoes,turmeric powder,chilli powder,garam masala salt and 2 tbsp water,mix well and cook on a medium flame  for 2 minutes while stirring continuously.
  5. Add the boiled white peas  along with the water with which they were cooked ,mix well and cook on a medium flame for 8-10 minutes.
  6. Garnish it with coriander leaves and serve hot.
