- 20 Grams – Quinoa
- 1 teaspoon olive oil
- 30 grams mushrooms, thinly sliced
- 3-4 cloves garlic, minced
- 1/2 teaspoon dried thyme
- Salt to taste
- Freshly ground black pepper to taste
- Coriander for garnishing

- Cook quinoa in water and set it aside.
- Next, heat olive oil in a large pan over a medium heat. Put mushrooms, garlic and thyme in the pan and let it cook while stirring occasionally for about 3-4 minutes.
- Season it with salt and pepper as per taste. Stir in quinoa until everything well gets combined.
- Serve hot, garnished with a few coriander leaves, if desired.
