Chitranna Rice Recipe

Chitranna rice is a South Indian delicacy which is very easy to prepare, and is equally healthy to the body. It is a popular dish in Karnataka and is a variant of the utterly palatable Lemon rice. We have given this traditional recipe a healthy twist by replacing white rice with unpolished rice.

Nutritional Benefits

Unpolished rice offers a wide range of benefits including high fibre for better digestion, it is gluten free, and contains no cholesterol. Unpolished rice is also low in glycaemic index, hence really suitable for Diabetics. Peanuts not only taste good, but they are also good sources of protein and healthy fats, especially Omega- 6 fatty acid. Peanuts contain biotin, which is essential for hair and skin health.

Ingredients

  • 60 gm unpolished rice
  • 20 gm onion (finely chopped)
  • ½ tsp coconut oil
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1.5 tsp peanuts (dry roasted and crushed)
  • ½ tsp grated coconut
  • 2-3 curry leaves
  • ½ tsp mustard seeds
  • ½ tsp lemon juice
  • Turmeric powder (a pinch)
  • Salt (according to taste)

 

Course: Lunch/ Dinner
Calories: 160 Kcal
Carbs: 22 gm
Protein: 4 gm
Fats: 3.5 gm

Method:

  • Cook rice by adding water, keep aside
  • In a deep non-stick pan, heat some oil, and then add mustard seeds, chana dal, urad dal, and peanuts.
  • Sauté for a minute
  • Now add onions, and sauté till golden brown
  • Add turmeric, and grated coconut
  • Now add cooked rice, lemon juice, and salt. Mix gently and cook for few minutes until the flavours are finely blended.
  • Serve Hot.
